Munggo or Mung beans is one of the typical dishes in the Philippines that is not only healthy but also very cheap to cook. I love this and so does my hubby.

I have actually never cooked this for myself before but there’s always a first-time right ? My first try was a success so I’d like to share the recipe with you.
Ingredients :
- 1 cup munggo or mung beans
- 3 cups of water
- 1 tbsp. olive oil
- 1/2 lb shrimp (or pork)
- 3 cloves of garlic, minced
- 1 onion, chopped ·
- 2 small sized tomatoes or 1 big one , chopped
- 2 cups water or broth
- 1/2 cup dried fish / dilis( dried anchovies )
- 1 tbsp. patis (fish sauce)
- 2 cups spinach leaves
- salt to taste
Cooking Procedures :
1. Boil mung beans in water until soft and easily mashed. Check from time to time to make sure it doesn’t dry up. Set aside.
2. In a pan, heat oil. Sautee shrimps or pork until it turns slightly brown.
3. Add garlic, onions and tomatoes. Saute for a few seconds until tomatoes wilted.
4. Pour in water or broth and add boiled mung beans.
5. Season with patis and salt to taste. Bring to boil and let it simmer until thick.
6. Cover and remove from heat. Serve hot.

The spinach just about 5 minutes before you are ready to turn off the fire.
