Hosting a Pinoy fiesta lunch or dinner to welcome a balikbayan or a foreign friend is a great way to remind them of our culture and give them a taste of what they have been missing. You don’t have to invite the whole town or barangay like in a real fiesta though. It can be a simple and cozy meal with family members or a few close friends.</p>
<p style="text-align: justify">Fiesta fares in the Philippines are as diverse as its various regions, you can plan your menu according to your local cuisine, family favorites or specialty, and your balikbayan’s favorite. Recommended fiesta dishes include, roasted pig or lechon, pancit, puto, kutchinta, menudo, adobo, kare-kare, caldereta, embutido, lechon manok, leche flan, buko pandan, and sago’t gulaman.</p>

As an alternative you can line the plates with banana leaf and serve your dishes in indigenous pots, plates or serving trays.</p>
<p style="text-align: justify">Of course, the best aspect of a Pinoy fiesta is being able to show the warmth and hospitality of our people. Your Pinoy fiesta meal will be most memorable for the bonding and camaraderie that will be formed while sharing the meal.</p>

<p>Leche Flan are always part of Filipino parties. It won&#8217;t be really complete without it.</p>
<p>This is one of my tried and tested recipe. I assure you this one works because I have used this recipe in more than once occasion with great success.</p>
<p><strong>Ingredients:</strong></p>
<p>1 cup sugar<br />
8 egg yolks<br />
2 egg whites<br />
1 can condensed milk<br />
1 cup water<br />
dayap rind</p>
<p><strong>Cooking Instructions:</strong></p>
<ol>
<li>Caramelize sugar by stirring continuously over medium heat until melted. Pour into flan mould and tilt it over the sides.</li>
<li>Beat egg yolks and egg whites slightly. Add condensed milk, water, dayap rind.</li>
<li>Strain and pour mixture into the caramel lined flan mould.</li>
<li>Place mould in another bigger saucepan filled with 1 inch of water.</li>
<li>Bring to boil and simmer for 40 minutes or until firm.</li>
<li>Cool before removing flan from mould.</li>
</ol>
<p>Now enjoy but eat in moderation!</p>

<p>I have actually never cooked this for myself before but there&#8217;s always a first-time right ? My first try was a success so I&#8217;d like to share the recipe with you.</p>
<p><small style="font-weight: bold; font-size: 11pt; ; font-style: italic;">Ingredients :</small> <small style="font-size: 10pt; "> </small></p>
<ul>
<li><small style="font-size: 10pt; ">1 cup munggo or mung beans</small></li>
<li><small style="font-size: 10pt; ">3 cups of water </small></li>
<li><small style="font-size: 10pt; ">1 tbsp. olive oil </small></li>
<li><small style="font-size: 10pt; ">1/2 lb shrimp (or pork) </small>
	</li>
<li><small style="font-size: 10pt; ">3 cloves of garlic, minced </small></li>
<li><small style="font-size: 10pt; ">1 onion, chopped ·</small></li>
<li><small style="font-size: 10pt; "> 2 small sized tomatoes or 1 big one , chopped</small></li>
<li><small style="font-size: 10pt; "> 2 cups water or broth </small></li>
<li><small style="font-size: 10pt; "> 1/2 cup dried fish / dilis( dried anchovies ) </small></li>
<li><small style="font-size: 10pt; ">1 tbsp. <em>patis</em> (fish sauce) </small></li>
<li>2 cups spinach leaves</li>
<li><small style="font-size: 10pt; ">salt to taste</small></li>
</ul>
<p><small style="font-size: 10pt; ;"> </small><small style="font-weight: bold; font-size: 11pt; color: #990033; font-style: italic;">Cooking Procedures :</small><small style="font-size: 10pt; ;"></small></p>
<p><small style="font-size: 10pt; ;">1.  Boil mung beans in water until soft and easily mashed. Check from time to time to make sure it doesn&#8217;t dry up. Set aside. </small><br />
<small style="font-size: 10pt; ;"> 2.  In a pan, heat oil. Sautee shrimps or pork  until it turns slightly brown. </small><br />
<small style="font-size: 10pt; ;">3.  Add garlic, onions and tomatoes. Saute for a few seconds until tomatoes wilted. </small><br />
<small style="font-size: 10pt; ;">4.  Pour in water or broth and add boiled mung beans.</small><br />
<small style="font-size: 10pt; ;"> 5.  Season with <em>patis</em> and salt to taste. Bring to boil and let it simmer until thick. </small><br />
<small style="font-size: 10pt; ;"> 6.  Cover and remove from heat. Serve hot.</small><br />
